Immunity Soup

*Disclaimer*- This soup will give you gnarly garlic breath... Not only will it knock out vampires or anyone that tries to kiss you, but it will also most likely knock out any virus that's creepin. This is my go to soup when I feel a little under the weather. Garlic has incredible antiviral properties and is a sure way to give your immune system a big boost. ALSO, you may feel slightly alarmed at the amount of garlic involved in this recipe, but know that after its roasted, garlic has a much more mild flavor. I buy the bags of pre peeled garlic to save on the tedious task of peeling dozens of cloves. Enjoy!


2 large yellow onions

150-200 cloves peeled garlic

2 tbs avocado oil

1tsp veggie bouillon

1 can coconut milk

1/2 cup fresh herbs (I used rosemary, thyme, and oregano fresh from the garden)

Salt and pepper to taste


-Roughly chop both onions and herbs

-In a large pan combine chopped onions, herbs, garlic and avocado oil.

-Roast at 400 degrees for 25-30 minutes or until golden brown, stirring every 10 minutes.

-Combine all the ingredients in a high speed blender adding salt and pepper to taste.
