Flower Power Almond Shortbread Cookies

I've had these shortbread cookies on my mind for MONTHS. I finally scooped up these beautiful edible flowers from the farmers market and holy guacamole I am IN LOVE with how pretty they are! These cookies are super simple, super healthy (GF, Vegan, and refined sugar free), and are sure to wow your friends. Enjoy!


Ingredients:

2 cups gluten free flower

1/2 cup maple syrup

1/2 cup butter flavored coconut oil

1/4 cup almonds finely chopped

1/2 tsp vanilla extract

1/2 tsp almond extract

1/8 tsp salt


Directions:

  1. Preheat oven to 375 degrees

  2. Combine all ingredients into a bowl until it forms a dough

  3. Scoop balls of dough onto a cookie sheet and flatten with the bottom of a cup

  4. Gently press edible flowers into cookies

  5. Bake for 10 minutes

  6. Cool and enjoy!
